BABY BRASA is Franco Noriega’s first New York restaurant, modeled after the traditional pollerías that are a hallmark of Peruvian street cuisine. Responsibly sourced through D’Artagnan, our free-range organic chicken packs a flavor that can only come from the freshest ingredients and Peruvian spices. FRANCO NORIEGA was born to a Peruvian family of restaurant owners and studied at the prestigious le Cordon Blue. He continued his culinary studies at the International Culinary Center in New York. He has worked as a private chef for many influential New Yorkers and handled many luncheons and dinners for brands such as Moma PS1, L'oreal Paris, Venmo, Bergdorf Goodman, and NEXT models, to name a few.

A former model, Noriega is committed to dishes that are both healthy and delicious.
